  Mr. Kazuo Inamori (Founder of Kyocera and KDDI, Honorary Chairman of JAL) says that when purchasing raw materials, you may feel tempted to buy more than necessary because the unit price will decrease if you buy in large quantities. However, you shouldn’t buy more than necessary according to Mr. Inamori’s book “Kyocera Philosophy”.

  Since you have to clear the minimum purchase amount, you need to be patient until the business volume increases. Narrowing down the menu will increase the purchase amount per supplier, helping you easier to meet the minimum purchase amount.  

  The companies that deliver what you need, when you need it, are essential to the success of your business. If you have a lot of space and purchase a large amount, you may waste your money, so we recommend the just-in-time method of purchasing the necessary amount when you need it.

  This teaching sounded surprising to me at first, but when I put it into practice, I realized what it meant. In fact, I’ve been careful about how I could consume the ingredients as quickly as possible as a restaurant owner. This is because the storage space for refrigerators and freezers is limited, and the size of the storage space is the upper limit of sales for the day. The first thing I thought about was narrowing down the menu and then using the just-in-time purchasing method.
